About Victorinox 6'' Fillet Knife
The fillet knife is long and narrow so that it can easily slide under the skin and down the backbone of fish. Victorinox's 6" Fillet Knife (40618) has a flexible blade and polypropylene handle. The knife is Ergonomically designed, lightweight and balanced to reduce wrist tension. The edge of the blade is conically ground length and crosswise to achieve a wider break point that provides durability and resistance to fracturing. All Victorinox Knives are laser tested to ensure world renowned sharpness.
